CHILLED AVOCADO SOUP

Ingredients

3 Avocados, Fully Ripe
1 Cup Chicken Broth
1 Cup Light Cream
1Tsp. Salt
¼ Tsp. Onion Salt Pinch of White Pepper
1 Tsp. Lemon Juice
Lemon Slices for Garnish

Instructions

  1. Halve avocados lengthwise; remove seeds and peel.  Blend with chicken broth in electric blender until smooth.  Add cream and seasonings and blend well.
  2. Pour into glass container, cover, and refrigerate for 3 hours or overnight. 
  3. Stir in lemon juice, garnish with lemon slices, and serve chilled. 

Serves 6.

NOTE: Serve in china or floral coffee cups.
