BASIL-MARINATED TOMATOES

Ingredients

3 Tomatoes, large
1/3 Cup Olive Oil
¼ Cup Red Wine Vinegar
2 to 3 Tbsp. Fresh Basil, Chopped
2 Tbsp. Onion, Chopped
1 Tsp. Salt
¼ Tsp. Pepper
1 Clove Garlic, Crushed

Instructions

  1. Cut tomatoes into ½ inch-thick slices; arrange in a thin layer in a large shallow dish. 
  2. Combine oil and remaining six ingredients in a jar, cover tightly, and shake vigorously. 
  3. Pour mixture over tomato slices. 
  4. Cover and marinate in refrigerator at least 8 hours before serving.
