Ingredients
2 Lbs. Ground Beef |
½ White Onion, Med, Finely Diced |
2 Cloves Garlic, Minced |
19 oz Red Enchilada Sauce |
1-1/2 Cups Monterrey Jack, Grated |
1-1/2 Cups Cheddar Cheese, Grated |
Tortilla Chips |
Salt and Pepper, To-Taste |
Optional Toppings: |
Sour Cream |
Avocados, Finely Diced |
Instructions
- Brown ground beef in a large skillet, with salt and pepper to-taste.
- Add in onion and garlic and cook until tender, about 3 minutes.
- Stir in Enchilada sauce and top with grated cheeses. Cover and allow cheese to melt, about 3 to 5 minutes.
- Serve with tortilla chips, sour cream, diced avocados and/or guacamole as additional toppings.
Servings: 8
Variations: For a spicy version use Monterrey Jack Cheese with Jalapeno peppers. I have also used Velveeta Cheese and it makes a creamier dip.
